I've spent much time throughout Thailand from Chiang Mai out to Issan and down through Surat Thani to Sunggai Kolok.
I'm a humble explorer. Aren't we all? Well, that's not exactly true. I guess you can say I might have had enough experience to be on the genius level.
I don't know what it's called in English but sometimes they refer to it as Morning-glory. Otherwise I think it's called "pat-boong". I'm usually a fan of panang for curry and pad kee mow for noodles.
I've always liked Sanamluang in Hollywood. Jitlada is decent if you're looking for a delicious Tom Yum Goong. I think Palm is good, but more for the entertainment and it's my own private theory that the Elvis impersonator is the owner and he was really just looking for a venue with a captive audience so he started a restaurant. Toi is maybe good for celebrity sightings.
